I mentioned in my first post, "How I Started?" that "mom is the best cook ever in my eyes". I'd like to go back to basics and walk down memory lane. This dish reminds me so much of my mom. Days when she was tired after work and still had to cook for her family but somehow she could always make a super tasty dish really quick. Each time I cook this dish it brings me back to how things were simpler besides, who doesn’t love SPAM?!……….


So, when you are tired from work or you ran out of ideas of what to cook and can't think of anything to eat, grab the luncheon meat from your cupboard and follow these easy steps.


preparation: 20 minutes

best eaten with rice


Ingredients

1 Tulip Brand Pork Shoulder (Spam)

5/6 Small lime juice (calamansi)

1 tablespoon of oyster sauce

½ dark sauce

1 tablespoon of corn starch. Mix well with half cup of water

½ tablespoon of salt

2 big red onion (coarsely chopped)

3 garlic bulbs (finely minced)

1 big long red chillies ( leave some slices for garnish at the end)

2 sprigs of Coriander (garnish)

2 eggs (optional)









Easy steps to make this


Step 1: Slice the spam up (half inch size) and fry it until golden

Step 2: Fry 2 eggs (ensure eggs are not too runny. This is only if you want to add more ingredients in and if not skip to Step 3.


Step 3: Heat up wok/pan ( I prefer wok). Olive oil in and throw in the chopped onions and minced garlic. Stir fry it for about 1 to 2 minutes and once you smell the garlic aroma that is the key to the next step!

Step 4: Add lime juice and sliced red chillies into the wok/pan

Step 5: Add pre-mixed corn starch with water (one cup) plus dark soya sauce, oyster sauce and salt

Step 6: Add in the fried spam in after this and taste the sauce

Step 7: Decorate the dish with coriander leaves and sliced chillies


Final Step: Serve with rice and enjoy !
