Hot Baby Lobster on Toast

If you want something fancy for afternoon tea when hosting a group of friends, then lobster sandwiches make the perfect sandwich. It's sweet, tangy and buttery taste of the sandwich will put a smile on anyone’s face. Each bite will be blissful!
I am going to show you how simple and easy this is done, made with fresh ingredients. Follow these easy steps, you won't go wrong and you will understand why it is a perfect
sandwich to "Wow!" your guests.
Ingredients

1 kg Baby lobsters (you can replace it with prawns/baby sweet prawns/Grilled or Pan fried slices of Spam)
Kewpie Mayonnaise
Huy Fong Siracha chilli sauce
1 Brioche Bread (just buy one )
1 lime
Easy steps to make this :
1. Live baby lobsters, which I bought from my favourite fish monger (The Fish Prince check out his facebook or just call Edmund at 9649 8431 for further details in Singapore) who will deliver to your doorstep subjected to a minimum buy of above $100 for free delivery at selected areas.
2. Make sure you de-vein the baby lobsters beforehand whilst it is alive (check out this link on how to de-vein the lobster - https://www.facebook.com/1057306074288888/posts/3692476684105134/?vh=e&extid=0&d=w - it's not for the faint-hearted). Chop of the head and keep it for another day to boil stock. Don’t waste the head!
3. Boil hot water with some salt in it (one table spoon). Put baby lobsters into hot water and wait for it to float or curled up in blood orange. Make sure your pot is big enough!
4. Take out the baby lobsters and set it aside to cool. Then peel the shell and take only the flesh out in one piece.

5. Now to make the sauce. 5 squirts of the mayo and 2 squirts of the siracha. Zest a bit of lime skin using a micro-plane zester and add a bit of lime juice in it. Since I am agak agak chef, I want you to try the sauce until it suits the heat, tangy and creaminess of the sauce. You will be the best gauge of your own palate to determine how much to put in. Taste taste taste! Add some salt at the end and taste again.
6. Slice the brioche bread into 1 inch of thickness and then toast the brioche. I usually cut 4 to 6 pieces and then toast it in the oven/toaster. Preheat the oven to 180 deg C for 15 mins pop the toasts in for about another 10 to 15 mins (check it so that it doesn’t turn too brown).
7. Take out the brioche toast and apply the sauce on top. Again you decide how much sauce you prefer because you do not want it too wet on the toast. Place the baby lobster meat on top of the sauce (maybe 2 to 3 pieces depending on the size) and then cut into squares so that you will have four pieces.

8. Add cilantro leaf as garnish on top of each square and serve to guest!
